Serving a country's leader is a dream for many chefs, and when the opportunity arises in a foreign land, it becomes even more thrilling and challenging. However, for celebrity chef Sanjeev Kapoor, this dream took an unexpected turn during a visit by Indian Prime Minister Narendra Modi to Abu Dhabi.
Chef Kapoor and his team were invited to Abu Dhabi to prepare a special meal for PM Modi and other dignitaries, including the rulers of the UAE. They carefully curated an elaborate menu showcasing the best of Indian cuisine. Just hours before the dinner, however, the team was informed that PM Modi was fasting and would not be eating the food they had prepared.
This sudden change led to a flurry of activity in the kitchen. Chef Kapoor shared in his Instagram series, Kahaani Khazana, that despite the disappointment, the team received a message saying that food suitable for fasting should be prepared instead. With only a few hours left, they quickly adapted and managed to craft a menu for fasting, alongside vegetarian and non-vegetarian dishes. The food was then transported to another hotel for service.
As the table was set, another unexpected twist occurred. Chef Kapoor received word that everyone, including the dignitaries, would be eating vegetarian food. Despite the challenges, the team adjusted once again and served the meal with a smile.
When Chef Kapoor met PM Modi and the dignitaries, including the Crown Prince of Abu Dhabi, PM Modi humorously remarked, "You feed us so much, why don't you eat yourself?" To which the chef replied, "I eat."
The menu crafted for this special occasion was a celebration of Indian culinary diversity. It included dishes from regions like Lucknow, Bengal, Chettinad, Rajasthan, Goa, Sindh, and Assam. Starters featured Oats Handvo, Mint and Imlee Salsa, Ghugni, Batata Puffs, Tabouleh, Cheese Fatayer, and Farsaan. For the vegetarian mains, dishes like Khatti Daal, Baingan Mirch ka Salan, and Bhindi Kadi were served, while meat lovers were treated to Tandoori Lamb Chops. The meal was rounded off with Zafrani Thandai, Moti Khass Biryani, Narangi Basundi, Karari Hazelnut Chikki, and fresh fruits.
Reflecting on the experience, Chef Kapoor emphasized the importance of adaptability in the kitchen. "In the kitchen, things rarely go exactly as planned. A menu changes. A requirement changes. Sometimes everything changes. What matters is staying calm, adapting quickly, and serving with the same care you started with," he noted.
This episode offers a glimpse into the challenges and triumphs behind the scenes in a chef's life. While the final dish may look glamorous, the effort and teamwork involved in bringing it to life deserve appreciation.
